Vegetarian Barbecue Bash!

National vegetarian week plus the scorchio summer weather equals just one thing: an utterly delicious veggie summer barbecue!

To celebrate the world of the herbivorous carrot muncher, we suggest that you, vegetarian, vegan or carnivore, try out this stunning spread over the weekend!

The Menu

lemon and mint cooler

Bean burgers: blend canned black beans, chickpeas, cashew nuts, garlic, egg, caramelised onions; ground coriander, chilli flakes and dried cumin. Pat the mixture into burgers with the help of a little flour and fry until heated through and crunchy on the outside.  Serve with tomatoes and fresh coriander.

Mediterranean vegetable kebabs: Chop red and yellow peppers, courgettes, red onion and aubergine into chunks. Slide on to kebab sticks with Tofu chunks and brush with an olive oil, lemon juice and garlic combo. Whack on the barbecue until charred and lovely.  

Green salad: buy a couple of the freshest lettuces you can find (of differing varieties) wash well in cold water to revitalise and dress with an olive oil, lemon juice, red wine vinegar and hint of mustard dressing.

Humus tzatziki, salsa and flat breads: buy pots from the shop - they are pretty pricey to make!

Lemon and mint cooler: this is a bit of an arduous one but worth the work: refreshing and light it is the perfect summer drink! Get yourself a pitcher, squeeze in the juice of about 12 lemons, pour in a bottle of light lemonade and lots of ice and freshly torn mint leaves. Serve with vodka or on its own!

So guys and girls, all that remains is to hit the shops, stock up on all these yummy ingredients, and get your mates around! Perfect! Have a great end to national vegetarian week and enjoy the sunshine!
