As it’s World Egg Day, we thought we’d honour one of the most simple, yet versatile, ingredients on the market with a few quick and simple student recipes.
Ramen egg drop soup
Not really a recipe, but a great way to turn a packet of noodles into a protein filled meal. When you’re boiling up your noodles slip an egg into the water once you’ve added the flavouring. Fancy.
Fry some chopped onion until golden throw in cubed potatoes, garlic powder and some season and carry on frying for around 10 minutes. Turn this into a dinner by adding in peppers and other veg (or bacon).
Pour over the egg and cook on the stove for around 5 minutes, then pop it in the oven for a further 10 minutes to finish.
The first step is to separate your eggs into whites and yolks. Whip the whites until its stiff and fluffy and add in a little cheese, chives and maybe some bacon (everything tastes better with bacon).
Put the fluffy mix onto a baking sheet, make a little well and pop in the yolk. Bake in the oven for a couple of minutes and… voilà!
Poach an egg (by adding a touch of vinegar to boiling water, swirling it and dropping in the egg), toast and butter a muffin then just whack on some hollandaise (packet sauce will do). Jazz it up with a slice of bacon or smoked salmon.
You’ll have a super swish looking breakfast and still have enough time to get ready for lectures.
Scrambled eggs and avocado
Adding avocado to a simple plate of scrambled eggs not only makes it more delicious; it adds in tonnes more vitamins! Great if you’re recovering from the night before.
